Slow Cooker Beef and Pumpkin Chili

This hearty protein-packed beef and pumpkin chili recipe is full of fresh vegetables and complex carbohydrates from pumpkin and sweet potatoes. It's bean-free and belly-pleasing too!

  • 2 Tbsp avocado oil
  • 1 large yellow onion chopped
  • 6 cloves garlic minced
  • 2 lbs lean ground beef
  • 4 Tbsp chili powder
  • 1-2 tsp sea salt to taste
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1 (7-oz) can green chiles
  • 1 (15-oz) can pumpkin puree
  • 1 (15-oz) can diced tomatoes
  • 2 Tbsp tomato paste
  • 1 to 2 cups beef broth or chicken broth
  • 1 medium-sized sweet potato chopped into cubes

Instructions

  • Heat the avocado oil in a large skillet over medium-high heat. Saute the onion, stirring occasionally, until softened, about 5 minutes. Add in the ground beef and minced garlic and use a spatula to break the meat into smaller chunks. Continue browning and chunking the meat until it has cooked nearly through.
  • Transfer the meat and onion mixture to the bottom of your slow cooker.
  • Add in the remaining ingredients except for the sweet potato and give everything a big stir.
  • Secure the lid on the crock pot and cook for 8 hours on low heat or 4-5 hours on high heat. When the chili has 2 hours of cook time remaining, add in the chopped sweet potato and stir well so that the chunks of sweet potato are submerged in liquid. Again, replace the lid and continue cooking for the remaining time (2 hours or until the sweet potato reaches your desired level of doneness).
  • Taste the chili for flavor and add salt or spices to your personal taste.
  • Serve chili in big bowls with your favorite toppings, like shredded cheddar cheese, sour cream (or Greek yogurt), chopped green onions or red onion, fresh cilantro, sliced avocado, etc.
