Peanut Butter Bars Recipe

These easy peanut butter bars are naturally grain free and gluten free. Use your favorite granulated sweetener to tailor the recipe to your nutritional needs.

  • Preheat the oven to 350 degrees Fahrenheit and line a 9” x 9” square baking pan with parchment paper.
  • Transfer the softened butter, peanut butter, and granulated sugar to a stand mixer fitted with a paddle attachment. Beat on medium high speed until combined and fluffy.
  • Scrape the sides of the bowl using a rubber spatula. Add in the eggs and vanilla extract and beat on medium speed until combined. Again, scrape the sides of the bowl with the rubber spatula.
  • In a separate bowl, stir together the almond flour, baking powder, baking soda, and sea salt. Pour the dry ingredients into the mixer. Mix on medium speed until a smooth dough forms. Mix in the chocolate chips.
  • Transfer the dough to the parchment-lined pan and spread it into an even layer. If desired, top with extra chocolate chips.
  • Bake on the center rack of the preheated oven for 20-25 minutes, or until the bars are golden brown around the edges. For gooey bars, bake for 20 minutes, or until the center is set up but not fully firm. For firmer bars, bake for 25-28 minutes.
  • Remove the bars from the oven and allow them to cool on a wire rack for at least 10 minutes. Slice the bars into squares and enjoy! Note: the longer you wait to slice the bars, the cleaner they will slice. Allow them to cool to room temperature before slicing if you want perfect slices.

Notes

*Use regular cane sugar, sugar-free sweetener (such as allulose or monk fruit sweetener), maple sugar, or coconut sugar.
**If you’re using salted peanut butter, reduce this amount to ½ teaspoon. For regular table salt (iodized salt), reduce the amount to ½ teaspoon.
