Hot Honey Sweet Potato Bites

These crispy on the outside, tender on the inside roasted sweet potatoes are engulfed in a sweet and savory hot honey butter sauce for the most amazing side dish or fall appetizer! Serve them with roast chicken, crispy salmon, pork chops, tri tip, and more!

Ingredients

  • 2.5 lbs sweet potatoes peeled and chopped into 1.5 to 2 inch chunks
  • 2 Tbsp avocado oil
  • Sea salt to taste

Garlic Butter Hot Honey:

  • 3 Tbsp unsalted butter
  • 2 large cloves garlic minced
  • 2 Tbsp honey

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Peel the sweet potatoes and chop them into 1.5 to 2-inch chunks. Transfer the chunks of sweet potato to a large rimmed baking dish and drizzle with avocado oil and sprinkle to taste with sea salt. Toss everything together until the potatoes are coated with oil and spread them into a single layer to avoid overlapping.
  • Roast potatoes in the preheated oven for 30-40 minutes, or until golden brown and fork tender, shaking the baking tray halfway through baking.
  • While the potatoes are roasting, heat the butter over medium heat in a small skillet. Once melted, add the minced garlic, and sauté, stirring occasionally, until garlic is fragrant, about 3 to 5 minutes.
  • Remove the garlic butter from the heat and stir in the honey. Set aside until ready to use.
  • Once the potatoes have finished roasting, transfer them to a serving dish and drizzle them with the hot honey mixture. Toss everything well, season to taste with more sea salt, and serve immediately. I love serving them alongside roast chicken, crispy salmon, pork chops, steak, etc.!

Notes

Toss in some chopped nuts, dried cranberries, feta cheese, or parmesan cheese for an extra twist!
