Ingredients

For the Glaze:

  • 1 cup powdered sugar
  • 3-4 Tbsp milk

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line a 9” x 5” loaf pan with parchment paper.
  • In a large bowl, whisk together the eggs, pure maple syrup, avocado oil, and vanilla extract until the wet ingredients are well combined.
  • In a separate bowl, stir together the almond flour, tapioca flour, baking powder, ground nutmeg, and sea salt until the dry ingredients are combined.
  • Pour the wet ingredients into the bowl with the dry ingredients and stir well until a thick batter forms.
  • Transfer the donut batter to the prepared loaf pan and spread it into an even layer. Bake on the center rack of the preheated oven for 40-45 minutes, or until the bread tests clean and is golden brown on top. Insert a digital thermometer into the center of the bread. If it reads 190 degrees F or higher, it is ready.
  • Let bread cool completely to room temperature.
  • Glaze the Loaf:
  • Pull the loaf out of the pan by tugging on the sides of the parchment paper and transfer to a large cutting board.
  • Mix the powdered sugar and milk (or water) in a measuring cup or a bowl and stir until all the lumps of sugar have dissolved.
  • Pour the glaze over the bread evenly until you have covered the whole loaf and all of the glaze is used.
  • Allow the bread to sit at room temperature for 1 hour or until the glaze has completely hardened.
