Preheat the oven to 350 degrees Fahrenheit and line a 9 x 5 inch loaf pan with parchment paper.
Mix together the eggs, pure maple syrup, and vanilla extract in a large bowl (the wet ingredients).
In a separate bowl, stir together the almond flour, tapioca flour, pumpkin pie spice, baking powder, and sea salt (dry ingredients).
Pour the dry ingredients into the bowl with the wet ingredients and mix well.
Stir in the chopped apples.
Pour the apple bread batter into the prepared baking pan and spread it into an even layer. Cover the bread pan with aluminum foil and bake on the center rack of the preheated oven for 60-70 minutes, or until the bread is baked through. Insert a digital thermometer into the center of the bread. If it is 190 degrees Fahrenheit or higher, it is cooked through.
