Ingredients

  • 2 Tbsp avocado oil
  • 1 yellow onion finely chopped
  • 5 cloves garlic minced
  • 1.5 to 2 pounds boneless skinless chicken thighs
  • 1.5 pounds yukon gold potatoes peeled and chopped into large chunks
  • 2 ears corn shucked, or 1 (15-oz) can corn, drained
  • 2 bay leaves
  • 2 Tbsp fresh parsley chopped
  • 1 jalapeno seeded and minced
  • 6 cups low-sodium chicken broth*
  • 1/2 tsp sea salt to taste
  • ¼ tsp black pepper to taste

For Topping:

  • ½ cup sour cream or Greek yogurt
  • ½ cup capers
  • ½ tsp dried dill optional
  • 1 avocado
  • 1 to 2 limes cut into slices

Instructions

  • Heat the avocado oil in a large stock pot such as a Dutch oven over medium heat.
  • Add the chopped onion and saute, stirring occasionally, until it has softened, about 5-8 minutes. Stir in the minced garlic and continue cooking for another 2-3 minutes.
  • Move the onion and garlic off to the side and place the boneless thighs in the pot in a single layer. Brown for 2-3 minutes per side.
  • Add in the rest of the ingredients for the soup, cover, and bring to a full boil. Reduce the heat to low and simmer for 40-50 minutes, or until the chicken is cooked through and the potatoes are very tender.
  • Use tongs to transfer the chicken thighs to a cutting board. Use two forks to shred the chicken and place it back in the pot.
  • In a small bowl, stir together sour cream (or Greek yogurt), capers, dried dill, chopped cilantro (if desired), and a drizzle of lime juice. Stir well to combine.
  • Serve ajiaco in large bowls with the creamy caper mixture on top and some sliced avocado. Enjoy!
