Use a sharp knife to cut the top inch off each artichoke. Similarly, chop the stem off. Use kitchen scissors to trim the pointy leaves.
Pour 1 cup of water into your Instant Pot (or pressure cooker) and insert the wire rack.
Place artichokes on the wire rack. Seal the lid and press the Pressure Cook button. Set the timer for 15 minutes for medium-sized artichokes or 25 minutes for large. Keep the steam vent sealed.
Once the pressure cooker has run its course, use the quick release to let out the steam. Open the lid and remove the artichokes.
Serve artichokes with your favorite dipping sauce.
