Add all of the ingredients for the no-bake breakfast cookies to a food processor.

Process until everything is mixed together and a thick dough forms.

Taste the dough for flavor and add more cinnamon, salt, or chocolate chips.

Form cookie shapes out of the dough and place them on a baking sheet. Freeze for 15 minutes.
