Blend everything except for the grated carrots, pecans and raisins in a high-powered blender or food processor.

Mix in the shredded carrots, chopped pecans, and raisins until evenly distributed throughout the batter.

Divide the cake batter between two 8-inch cake pans. Bake at 350 for 20-25 minutes. Allow the cakes to cool completely to room temperature.

Release the cakes from the cake pans and frost with cream cheese frosting, creating a 2-tier cake.
