Mix the wet ingredients in a large mixing bowl, then add in the dry ingredients and mix until a smooth batter forms.

Add the ingredients for the streusel topping to a mixing bowl and mix to combine.

Pour half of the batter into a parchment-lined cake pan and sprinkle half of the pecan mixture over the batter. Repeat for the remaining batter and crumble topping.

Cover the pan with foil and bake for 30 minutes. Remove the foil and bake for another 15 to 20 minutes or until the cake tests clean. Slice and serve.
