- oats - applesauce or ripe bananas - carrots - eggs - oil - shredded coconut, pecans, raisins

Mash the bananas (or add the applesauce) to a mixing bowl and mix in the eggs and vanilla extract

Add the dry ingredients to the bowl with the wet ingredients and mix well.

Stir the grated carrots and pecans into the muffin batter.

Transfer muffin batter to a muffin tin and bake at 350 for 25-30 minutes.
