Prepare the Salad Ingredients

Soak the dried chilis in boiling water for 15 minutes. Remove the stems and blend them in a blender with all of the other ingredients for the sauce.

Transfer the raw chicken and the sauce to your crock pot. Cook on low heat for 8 hours.

Shred the cooked chicken with two forks.

Prepare the Grilled Salmon

Heat corn tortillas in a skillet with grated cheese and shredded chicken over half of the tortilla.

Fold the tortilla over and drizzle with juices from the crock pot. Continue cooking and flipping until the tortilla is nice and crispy. Serve with the sauce for dipping and enjoy!
