Turmeric Chicken Fried Rice

Ingredients

  • 1 1/2 cups white rice soaked*
  • 4 Tbsp avocado oil divided
  • 1/2 tsp sea salt
  • 1/2 tsp ground turmeric
  • 1 large carrot peeled and diced
  • 1/2 red bell pepper diced
  • 1 cup green peas
  • 1 bunch green onion
  • 2 cups cooked chicken chopped
  • 3 large eggs scrambled

Instructions

  • Soak the white rice 15 minutes. Drain. Add 2 3/4 cups of water, 1 tablespoon of oil, ¼ tsp sea salt, and ground turmeric. Cover, bring to a full boil, reduce heat to a simmer and cook 10 to 15 minutes according to package instructions. If you're using leftover cooked rice, skip this step and add the turmeric in step 3.
  • Heat 3 tablespoons of oil in a large nonstick skillet over medium high heat. Add the chopped carrot, bell pepper, and green onion. Cook, stirring occasionally, until softened, about 5 minutes.
  • Stir in the green beans and cooked chicken and cook until heated through. Add the cooked rice and stir well.
  • Scramble the eggs in a separate skillet and stir into the fried rice. Serve alongside your favorite entrée.

Notes

*Or use 4 cups of cooked white rice.
