  1. Preheat the oven to 350 degrees F.
  2. In a mixing bowl, combine eggs, butter, vanilla extract and olive oil. Mix until smooth.
  3. In a separate bowl, mix the flours, sugar, baking powder, baking soda and salt together.
  4. Add the dry mixture to the bowl with the wet mixture and stir until dough forms.
  5. Fold in the chopped pluot and white chocolate chips.
  6. Form balls out of the dough and then flatten them slightly before placing them on an oiled or parchment-lined baking sheet. The dough will be slightly crumbly - this is normal!
  7. Bake for 14 minutes or until desired level of crisp is reached.
