Ground Beef and Sweet Potato Skillet with Brussel Sprouts

Ingredients

  • 1 Tbsp avocado oil
  • 1 small red onion
  • 1 lb ground beef
  • 8 ounces brussel sprouts
  • 1 small sweet potato
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp sea salt to taste

Instructions

  • Add all of the ingredients to a large skillet and heat to medium-high. Place the ground beef in the center of the skillet to allow it to brown for 2 minutes before flipping it to the other side and browning another 2 minutes.
  • Chop up the beef using a spatula, then stir it into the vegetables.
  • Turn the heat down to medium, cover the skillet and cook for 10 to 15 minutes, stirring occasionally, or until the vegetables have reached your preferred level of done-ness.
  • Taste for flavor and add sea salt to taste.
