Add all of the ingredients for the keto fudgesicles to a food processor or blender and process until completely smooth and creamy. Note that you’ll need to stop the food processor a few times to scrape the sides in order to get it to blend all the way. If your food processor is having difficulty getting everything to blend, you can add more full-fat canned coconut milk to help it along.
Taste the mixture for flavor and add more sugar-free sweetener to taste.
Transfer the mixture to a popsicle mold (recipes makes 6 fudgesicles). Insert the popsicle sticks and freeze for 3 hours, or until completely set up.
When you’re ready to eat the fudgesicles, thaw them for 5 to 8 minutes. You can also run the outside of the popsicle mold under hot water to help release the fudgesicles from the mold.
