Vegan Paleo Peach Cobbler

Toss the ingredients for the peach filling in a mixing bowl until well-combined.
Stir together the ingredients for the cobbler topping in a mixing bowl until a thick dough forms.
Preheat the oven to 350 degrees F.
Transfer the peach filling to a 8” x 8” baking pan.
Form 6 to 8 disc-shaped biscuits out of the cobbler topping dough and arrange them on top of the peaches.
Bake on the center rack of the preheated oven for 30 to 40 minutes, or until the topping is golden-brown and the peaches are nice and soft and bubbly (I do 35 minutes).
Serve it up with vanilla ice cream for an amazing treat loved by all!
