Cucumber Dill Avocado Tuna Salad

Ingredients

  • 1 large avocado peeled and diced
  • 2 5- ounce cans tuna drained
  • 1 tablespoon stone ground mustard
  • 1 tablespoon fresh lime juice
  • 1/8 teaspoon sea salt to taste
  • 2 teaspoons fresh dill chopped, to taste
  • 1/2 cup red bell pepper finely chopped
  • 1/2 cup cucumber finely chopped
  • 1 small carrot peeled and chopped (1/4 cup)
  • 1/2 cup green onion chopped

Instructions

  • Mash the avocado in a mixing bowl until creamy. Add the tuna, stone ground mustard, lime juice, and sea salt and stir well. Add the remaining ingredients and stir until well incorporated. Taste the tuna salad for flavor and add more sea salt and/or lime juice to taste. Serve on toasted bread or on top of a green salad
