- 1 1/2 lbs salmon cut into individual fillets
- 3 Tbsp avocado oil
- 1/2 cup pineapple juice
- 1 1/2 inch nub fresh ginger peeled
- 2 cloves garlic
- 1/2 tsp sea salt
- 2 Tbsp coconut aminos or liquid aminos, optional
Add all of the ingredients for the marinade to a blender and blend until smooth. Place salmon fillets into a zip lock bag or sealable container and pour marinade over the fish. Seal and move the fish around until everything is well-coated in marinade. Refrigerate at least 1 hour (up to 8).
When you’re ready to bake, preheat the oven to 350 degrees F. Place the salmon in a casserole dish, along with the marinade. Bake for 20 to 30 minutes, until fish is cooked through.
Spoon the marinade over the fish (it will have thickened during the baking process) before serving and serve with choice of side dishes.
