Pineapple Ginger Glazed Baked Salmon

Ingredients

  • 1 1/2 lbs salmon cut into individual fillets
  • 3 Tbsp avocado oil
  • 1/2 cup pineapple juice
  • 1 1/2 inch nub fresh ginger peeled
  • 2 cloves garlic
  • 1/2 tsp sea salt
  • 2 Tbsp coconut aminos or liquid aminos, optional

Instructions

  • Add all of the ingredients for the marinade to a blender and blend until smooth. Place salmon fillets into a zip lock bag or sealable container and pour marinade over the fish. Seal and move the fish around until everything is well-coated in marinade. Refrigerate at least 1 hour (up to 8).
  • When you’re ready to bake, preheat the oven to 350 degrees F. Place the salmon in a casserole dish, along with the marinade. Bake for 20 to 30 minutes, until fish is cooked through.
  • Spoon the marinade over the fish (it will have thickened during the baking process) before serving and serve with choice of side dishes.
