SALSA VERDE CHICKEN AND RICE CASSEROLE RECIPE

Salsa Verde Chicken and Rice Casserole features tomatillo salsa, bell pepper, and corn for a flavorful, comforting meal.

– green bell pepper – garlic – chicken breasts – chili powder – white rice – corn – salsa verde – chicken broth – sea salt – colby jack cheese

Prepare the Salsa Verde up to 5 days in advance if you're making it homemade. If not, use store-bought green tomatillo salsa and proceed forth!

Preheat the oven to 375° Fahrenheit. Add the bell peppers, garlic, chopped chicken, chili powder, white rice, and corn to a large (13” x 9”) casserole dish or baking dish.

Stir in the salsa verde, chicken broth, and sea salt and stir well.

Similarly, stir in half (1 cup) of the grated cheese.

Cover the casserole dish with foil and bake for 45 minutes. Remove the foil, give everything a stir, then sprinkle with the remaining (1 cup) of grated cheese.
