ORANGE GINGER SHRIMP STIR FRY

Orange Ginger Shrimp Stir Fry is a quick and easy healthy dinner recipe, perfect for throwing together for weeknight dinners.

– coconut oil – sesame oil – yellow onion – carrots – red bell pepper – yellow bell pepper – broccoli – garlic – ginger – raw shrimp

Heat the oil in a large skillet or wok over medium-high heat. Add the onion and carrots and sauté, stirring frequently, until vegetables begin to soften, about 3 minutes.

Add the remaining vegetables and sauté vegetables for another 3 to 5 minutes, until they begin to soften.

Scoot the vegetables off to the sides, creating some space for the shrimp. Place the shrimp on the skillet in a single layer and cook for 2-3 minutes per side.

Stir in the remaining sauce ingredients in the order in which they appear on the ingredients list.

Cook, stirring frequently, until the shrimp has cooked through and the sauce is thick, about 10 to 12 minutes.
