Sprinkle both sides of the chicken thighs with salt and pepper. Sear for 4 minutes per side in a large thick-bottomed pot. Place chicken on a plate and set aside.

Sauté the onion, garlic, and rice in the same pot you used to cook the chicken.

Pour in the broth, artichoke hearts, sun-dried tomatoes, and kalamata olives. Add back in the browned chicken.

Cover the pot and bring it to a full boil. Reduce the heat to low and cook, covered, for 20 minutes. Serve and enjoy!
