Add all of the ingredients for the energy bites to a food processor.

Process until everything is well combined. Add 2 to 6 tablespoons of water and continue blending, until the mixture presses together easily.

Press the energy bite mixture into the holes of a muffin tray, creating even layers.

Drizzle melted chocolate over the nutty layer. If desired, sprinkle with flaky sea salt.

Freeze for one hour or until the chocolate has set up. Enjoy!
