HEALTHY OATMEAL CARROT CAKE MUFFINS

Packed with classic carrot cake flavors, these Oatmeal Carrot Cake Muffins are made with whole grain oats instead of flour. Lower in sugar and fat than standard carrot cake, these delicious muffins are the perfect everyday treat!

- oats - applesauce - eggs - avocado oil (or oil of choice) - pure maple syrup - carrots, shredded coconut, walnuts, raisins

Mix the wet ingredients for the muffins in a large mixing bowl.

Blend the oats in a blender, then add in the rest of the dry ingredients and blend to combine.

Pour the dry ingredients into the bowl with the wet ingredients and mix. Stir in the grated carrots, chopped nuts, coconut, and raisins and mix.

Pour batter into a muffin tin and bake at 350 for 22-26 minutes. Allow the muffins to cool completely before enjoying.
