Mix together eggs, applesauce, pure maple syrup, and vanilla extract (wet ingredients).

Blend the oats in a blender until a flour forms. Add in the cinnamon, baking powder, and salt and blend until dry ingredients are combined.

Mix the dry ingredients into the bowl with the wet ingredients. Stir in the grated carrot, chopped nuts, shredded coconut and raisins.

Transfer batter to a loaf pan and bake at 350 covered in foil for 50 minutes. Bake uncovered for 15 to 25 minutes.
