Sauté the onion for 3 to 5 minutes, until softened.

Add in the ground beef and brown for 2-3 minutes per side before breaking into smaller chunks with a spatula or wooden spoon.

Stir in the cauliflower, garlic, bell peppers, chili powder and broth.

Cover the skillet and cook for 8-10 minutes, until cauliflower has softened. Add the spinach and cook for another 2-3 minutes.
