Chop the cold butter into small chunks. Make sure your butter is very cold!

Transfer the gluten-free flour and the butter to a stand mixer and beat until pea sized chunks form.

Add ice cold water one tablespoon at a time until a thick dough forms, about 4-5 tablespoons.

Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 2 hours before using.

Roll out the dough on a floured surface and transfer it to a 9-inch pie pan. Poke several holes into the dough with a fork. Proceed with your pie recipe!
