CRISPY CHEESY POTATO TACOS

- potatoes - Greek yogurt or sour cream - butter - cheese - garlic powder and onion powder - corn tortillas

Combine the ingredients for the pico de gallo in a mixing bowl.

Boil the potatoes until tender then mash them with the rest of the ingredients for the mashed potatoes (sour cream, butter, onion powder, garlic powder, salt and pepper)

Spread 1/3 to 1/2 cup of potato mixture over one of half of one of the tortillas and add grated cheese on the other half. Fold the taco and repeat for the remaining ingredients.

Pan fry the tacos in oil for 2-4 minutes per side, until they reach your desired level of crisp.
