Just made this recipe and it is so good! I used a pumpkin muffin pan (makes muffins shaped like pumpkins), baked for 25 minutes, and they turned out perfectly making 9 large muffins.

- oats - pumpkin puree - eggs - granulated sweetener of choice - cinnamon & pumpkin spice - baking powder - sea salt

Blend the oats in a high-speed blender until a flour forms.

Combine the wet ingredients in a mixing bowl then add in the dry ingredients and mix until a thick batter forms.

Transfer half of the pumpkin bread batter to a loaf pan and spread it into an even layer.

Mix the cinnamon sugar mixture in a bowl then sprinkle all of it on top of the batter. Spread the remaining bread batter on top of the cinnamon layer.

Use a butter knife to draw a large "S" shape into the bread batter - this creates the cinnamon swirl. Bake at 350 for 50-70 minutes.
