Heat the coconut milk and curry paste in a small saucepan and bring to a full but gentle boil.

If you’re using animal protein that has already been cooked, add it to the sauce and allow it to heat through. Reduce the heat and keep the sauce cooking at a simmer while the vegetables are sautéing.

Heat the avocado oil to a large skillet and heat over medium to medium-high. Add the chopped vegetables, stir well, and cover.

Cook, stirring occasionally, until vegetables reach desired done-ness.

Add desired amount of rice to a bowl or a plate, followed by the sauteed vegetables, sauce and protein. Add sea salt to taste and enjoy!
