It baffles me, considering how much I love fish and seafood. Nevertheless, here we are! And we have much to discuss. In this post, I have included everything you need to know about cooking perfect seared scallops (and then some)!

Naturally buttery in flavor, a great seared scallop will have a perfect crisp on the outside and melt in your mouth. One of the best parts about scallops is they are so versatile. You can flavor them any way you’d like with seasonings and sauces, and serve them any which way (think: in pasta, over rice, in a seafood soup, alongside a salad, with side dishes like roasted vegetables, etc!).

If you’ve never tried it, just picture tender beef stewed in a tangy creamy sauce served on top of delicious buttery carbs. Sound appealing? Just you wait…

What is Beef Stroganoff?:

Beef Stroganoff (or beef Stroganov) is a classic Russian meal of pan-sauteed  beef in a mustard-broth-cream sauce. Traditionally, the recipe is made without onions or mushrooms, but the dish has taken on many variations to include tomato paste, onions, mushrooms, sugar, sour cream, and/or a combination thereof. Beef stroganoff is typically served with wide egg noodles or rice. 

How to Make Beef Stroganoff Dairy-Free:

For those of you who are sensitive to dairy, lactose intolerant, or simply try to limit your dairy intake, you can still enjoy marvelous beef stroganoff without the dairy! The combination of coconut cream (the thick portion that solidifies at the top of a can of coconut milk) and lemon juice has the same consistency and nearly the same flavor of sour cream or buttermilk. 

You can source coconut cream in a couple of ways. First, you can buy a can of coconut cream from the store or online, as there are many brands who sell it. As an alternative, you can buy 1 can of regular full-fat coconut milk and refrigerate it overnight (this is if you keep your house warm and your coconut milk is typically assimilated when you open it. After refrigerating the coconut milk, simply open it and scoop out the thick coconut cream. You can use the water at the bottom for smoothies or other recipes.

My house stays cool and I live in a cool climate, so my coconut milk is often already separated into cream and water when I open it).

If you don’t like the taste of coconut milk, or if you’re worried the replacement will make the meal taste inauthentic, don’t fret! It is truly indistinguishable once all of the flavors come together in the dish.

Thai food is my ultimate comfort food, and making it at home is one of my most coveted rituals. I love the way my home smells while I’m cooking, and enjoy the combination of creamy, tangy, sweet flavors. I also love making Thai for friends and family, as it’s always an impressive crowd-pleaser!

Welcome to my morning obsession.

Confession of a former coffee addict: Coffee used to control my life. 

I suppose that is a bold statement, but the truth is, I’d throw an internal fit unless I consumed at least 20 ounces of battery acid strong bulletproof coffee first thing in the morning before anything else occurred. 

Not a big deal for most people, right? 

But I noticed my coffee habit was getting in the way of my health. I was diagnosed with hypothyroidism (you’re supposed to avoid large amounts of caffeine to reduce hypothryoid symptoms) and have had chronic gut issues for the last 8+ years. 

I had a sneaking suspicion that I could level up in my hormonal and gut health if I cut down on coffee. So I came up with a plan. Rather than eliminating and being miserable, replace my much coveted morning beverage with an equally satisfying, yet better-for-me option.

Enter: Earl Grey Matcha Latte.

For years, I have quit coffee for a week or so at a time and replaced it with matcha lattes, but I always found matcha alone to be a bit underwhelming. I’ve always loved Earl Grey Tea and feel I do need caffeine to get things moving in the morning (girl’s gotta poop!), so I combined forces, made it bulletproof, and lo and behold my new morning addiction is this very latte.

I read this article a few months ago suggesting Black Tea is great for your gut microbiome. It not only increases the diversity of your good gut bacteria, but it also feeds the bacteria for many hours after consumption. 

If you’re familiar with probiotics, you may already know that most probiotics only survive in your system for 20 minutes after you consume them, which is why it is brilliant to consume foods and drink that help the survival of your beneficial bacteria.

Studies have shown both black and green tea are great for repairing your stomach and intestinal lining, which is fabulous for those who suffer from any sort of GI symptoms, especially leaky gut.

Sure, both black and green tea contain caffeine, but the caffeine isn’t a huge concern of mine, so much as the way it is metabolised. I definitely have more sustained energy throughout the day and find my anxiety is much, much lower when I drink an Earl Grey Matcha Latte as opposed to coffee.

In fact, since I’ve been on this kick for a few months now, I have come to drink coffee less and less (I was doing 2 cups per week and now, I’m closer to 1 cup every week or two) because I simply feel better when I don’t drink it.

Coconut milk is what makes this soup nice and creamy. If you don’t like the flavor of coconut milk, no sweat – you truly cannot taste it. If you do dairy, you can always replace the coconut milk with half & half or heavy cream.
