Add the ingredients for the shortbread crust to a mixing bowl and stir well to combine.

Press the crust mixture into a parchment lined pan. Bake at 350 for 15 minutes, or until golden brown.

Add the eggs, lemon juice, and lemon zest to a mixing bowl. Whisk to combine.

Whisk in the granulated sugar and almond flour.

Pour the lemon custard filling into the pan with the pre-baked crust. Bake at 350 until the custard has set up, about 15-18 minutes. Chill in the refrigerator for 2 hours before slicing.
