Cobbler Topping: – all-purpose flour – coconut oil – maple syrup – vanilla extract – sea salt

Preheat the oven to 350° F. Toss together the ingredients for the peach filling to a measuring cup or small bowl and toss together until well-combined. Transfer the peach mixture to an oven-safe ramekin or small dish.
Melt butter or coconut oil in a small measuring cup (or a small bowl) for 20-40 seconds in the microwave. Add the remaining ingredients for the cobbler topping to the measuring cup. Mix well until a thick dough forms. Set aside until ready to use.

Place the flour mixture on top of the peaches. I form a crumble topping out of the dough, but you can also create an even layer or a biscuit shape out of the cobbler dough.

Place the ramekin of peach cobbler on a baking sheet. Bake on the center rack of the preheated oven for 25-30 minutes, or until the topping is golden brown and the peaches have softened.
