Healthy Weekly Meal Plan 12.15.2015

Heyo December! What are you guys up to this weekend? Installing the ol’ Christmas tree? Hanging some decorations? Driving around town looking at all the pretty Chrsitmas lights? Baking up a frenzy? I’ll stop.

For this week’s meal plan, we’ve got spaghetti squash, we’ve got pasta, we’ve got chili, enchiladas, and butternut squash soup. Basically, the menu this week is full of variety and health benefits to make your taste buds swoon and keep your belly happy. Be sure to print out the grocery list at the end if you’re wanting to win the organization prize!

Monday

Prep Ahead: The spaghetti squash can be roasted and “spaghetti-ed” a day or two ahead of time.

Vegetarian Options: To make this recipe vegetarian, omit the chicken and add tofu or chickpeas.

Tuesday

Crockpot Vegetarian Chili with FaroCrockpot Vegetarian Chili with Farro from Cookie Monster Cooking.

Prep Ahead: This recipe requires very little prep! Just chop up some veggies and dump in your slow cooker!

Gluten-Free Option: Substitute the farro for brown rice or quinoa

Wednesday

30- Minute Creamy Pesto Pasta

Prep Ahead: The sauce may be made in advance, and the veggies may be prepped ahead.

Thursday

Steak Fajita Enchiladas

Steak Fajita Enchiladas from greens & chocolate.

Prep Ahead: You can chop the veggies ahead of time and prepare the fajita seasoning ahead of time.

Vegetarian Option: Omit the steak and add extra vegetables like squash, more bell peppers, red onion, or corn. You can also use chicken instead of steak.

Friday

Roasted Butternut Squash Soup

Roasted Butternut Squash and Red Lentil Soup from Spoonful of Flavor.

Prep Ahead: You can chop the squash and other vegetables ahead of time or buy pre-cut butternut squash. You can even roast the butternut squash ahead of time.

    Hi!

    I tried the raspberry scone recipe and it was really good!! I was wondering though if you used xanthan gum for it doesn’t call for it and GF mix usually don’t have it in. Thank you!!

    Also all your recipes look so good! I’m going to have to try more of them!

      Hi Celiane, I’m so glad you tried and enjoyed the recipe! I didn’t use Xanthan gum, just Bob’s Red Mill’s Gluten-Free 1-to-1 Baking Flour. I find I don’t need to add much of anything else (besides a little baking powder or baking soda) when I use the that flour 🙂 Hope that helps and let me know if you have any other questions!
