We’ve all had caramelized onions, but have you ever tried caramelized cabbage?

Truth be told, I couldn’t tell you whether or not caramelized cabbage is a thing. I dreamt it up one day while I was thinking about making a cabbage stir fry and caramelized onions were simultaneously on my mind.

I thought it brilliant to slowly cook sliced cabbage until it was softened yet slightly crispy and deeply golden-brown for a crazy flavorful approach to the otherwise bland vegetable.

And it’s so easy to prepare! If you can caramelize an onion (which we will be doing in this recipe, too), then you can caramelize a cabbage!

The way I see it, caramelized cabbage can be used in all sorts of ways – as a straight up vegetable side dish, a condiment, topping for sandwiches, burgers, steak, or chicken. I would even use it in burritos, grilled cheese sandwiches of breakfast sandwiches. Go wild!

Cabbage is neutral in flavor, making it ideal for dishes using big bold flavors like onion, garlic, and bacon. It doesn’t take much to spruce it up and make it extra palatable.

Dairy-Free Keto Pecan Pie is a sugar-free version of classic Pecan Pie. Made with grain-free almond flour pie crust and delicious sugar-free caramel filling with the most delectable crunch from the pecans, this healthier dessert recipe is a wonderful treat to share with friends and family.

Truth: I didn’t try pecan pie until I was in college because I was convinced I wouldn’t like it.

Boy oh boy, was I incorrect!

Pecan pie is one of my favorites, thought I don’t eat it often, because it contains ingredients with which I don’t mix well (lots of dairy and sugar).

Traditional pecan pie is made primarily of butter, cream, and sugar. And pecans. DELICIOUS! 

It is packed with nutty flavor and texture while boasting a gooey caramel-like appeal on top of a buttery crust. If you haven’t tried it, I highly encourage it!

Low-Carb Pecan Pie made grain-free, dairy-free, keto, healthier dessert recipe

Imagine caramel and a maple tree had a baby that exploded in your mouth with sultry bits of shortbread and softened nuts. That’s pretty much the experience you get with pecan pie. It goos so well.

In order to take a dairy-free and sugar-free approach, I swap all dairy with coconut oil and coconut milk (don’t worry, the pie does not taste like coconut), and a sugar-free sweetener. 

The end result is a pecan pie that tastes buttery, is nice and sweet, yet is grain-free, sugar-free and keto friendly. 

For those of you who don’t use sugar-free sweeteners (I didn’t for a long time while I was experiencing gut issues, because they aggravated my IBS), I have included an paleo option, which uses coconut sugar.

What is really, truly important when I zoom out?

A few simple questions and some deep breathing may be all it takes to bring ourselves back to peace and to recognize: life is a journey, and it doesn’t need to be controlled.

Surrender isn’t for the weak. It’s for the courageous. When we allow life to be as it is, we’re receptive to its lessons. If we try to resist, that which we resist persists.

So we can take a collective moment, you and me, to take a deep breath, exhale out our need for control, really take a look around and find something beautiful we can appreciate.

You are your own leader.

And streusel topping always improves a muffin. Always. That is a fact.
