Chimichurri Beef Sliders

The perfect appetizer or easy dinner recipe, these Chimichurri Beef Sliders boast big flavors. A combination of onion, garlic, fresh herbs and vinegar makes chimichurri sauce taste so inviting for a finger lickin’ good experience.

I made this recipe for Chimichurri Beef Sliders for the first time back in 2013.

The inspiration for the recipe came from two sources. First, in my college days, I was a slider girl. If I was out at a bar or restaurant that had sliders on the menu, I was ordering those sliders regardless of what they entailed.

Secondly, chimichurri sauce. At the time I made this recipe, I had just whipped up a batch of homemade chimichurri sauce for the first time.

The experience was so transformative that I was putting chimichurri sauce on, in, and around everything. In fact, I was using it as salad dressing. 

As it turns out, chimichurri sauce is incredible on burgers and sliders. This is the smell we’re stepping in right now!

In case you are new to it, chimichurri sauce originates from Argentina and is often used as a condiment for steak.

Chimichurri sauce is traditionally made with flat leaf parsley, fresh cilantro, olive oil, garlic and vinegar, but there’s a million different renditions of it. Some people add peppers, spices, lime juice, fresh oregano, white onion, and on and on and on.

Preparing it only takes a few minutes, which is a beautiful tradeoff considering how delicious it is.

If you’ve never made sliders at home, no stress. The process for this particular recipe is identical to making regular hamburgers, but in miniature form. The only difference you need to be aware of is you will need smaller buns to accommodate smaller burger patties.

The combination of juicy beef burgers with insanely flavorful chimichurri, gooey cheese, and a toasted bun makes the perfect bite that will drive your taste buds wild!

Let’s discuss the simple ingredients for this easy crowd favorite. You can find all of them at most grocery stores.

Ingredients for Beef Sliders:

Chimichurri Sauce Ingredients:

I make chimichurri sauce with a combination of cilantro, parsley, shallot, jalapeno, garlic, rice vinegar, olive oil and sea salt.

Slider Ingredients:

Ground Beef: Select your favorite blend of ground beef for burgers. You can stick with lean ground beef (90/10 or leaner) or do as I do and go for more fat content. I like using 85/15 or 80/20 ground beef.

Cheese of Choice: Pick your favorite cheese for sliders! I like pepper jack cheese for this particular slider recipe, but any kind of melty cheese works. Try cheddar cheese, Swiss cheese, provolone cheese, Monterey jack cheese, gruyere cheese, gouda cheese, etc. 

Slider Buns: For sliders, we need small buns. If your grocery store carries slider buns, this will be an easy selection! If there isn’t an option for slider buns, you can use sweet Hawaiian rolls.

You can also make your own small gluten-free hamburger buns or go with lettuce buns for a low-carb option.

Avocado: To add creamy texture and more flavor, I love adding avocado slices in addition to the slices of cheese.

Mixed Greens: Because adding a vegetable puts off the air of healthy eating, we add some leafy greens to the buns.

Recipe Adaptations:

  • Top the sliders with caramelized onions, fresh tomato slices, pickles, or any of your other favorite toppings.
  • Mix 2 teaspoons of Worcestershire sauce into the ground beef mixture if you have it on hand.
  • Add 1 teaspoon of garlic powder and onion powder to the ground beef mixture if you have them on hand.

How to Make Chimichurri Beef Sliders:

Prepare the Chimichurri Sauce

Add all ingredients except for oil to a blender or food processor. Blend on a low speed to chop the ingredients.

Slowly add the oil while the machine is on. Continue blending until the sauce reaches your desired consistency.

Pour chimichurri sauce into a jar. Seal, refrigerate, and use for up to 1 week following preparation.

Make the Chimichurri Beef Sliders

Place the ground beef in a mixing bowl and add 3 tablespoons of chimichurri sauce. Season meat with sea salt and black pepper to your personal taste.

These additions bring extra flavor to already delicious ground beef. Use your hands to massage the sauce and seasonings into the beef, making sure it is well distributed.

Heat a cast iron skillet to medium-high. Form 6 to 8 small patties out of the beef and place them on the skillet.

Allow sliders to cook until juices seep out and the bottom firms up, turns golden brown and appears crispy, about 2-3 minutes.

Flip to the other side and cook an additional 30 seconds to 1 minute before adding a small slice of cheese. Continue to cook to desired done-ness or until cheese is melted. I recommend cooking sliders to medium-rare for the tastiest result.

Toast the slider buns in the oven cut-side up on the broil setting just until toasted. Spread melted butter or mayonnaise over the buns if you’d like.

Make sliders by compiling the mixed greens, slider patties, and avocado and drizzle chimichurri sauce on top!

If you have toothpicks, you can insert them into the tops of the rolls and serve individual sliders on a platter or with side dishes.

Store leftover slider patties in an airtight container in the refrigerator for up to 5 days. You can heat up leftover sliders in the air fryer or toaster oven.

Serve sliders with French fries, Crispy Baked Sweet Potato Fries or The Best Potato Salad for a delicious full meal.

Ingredients

For the Chimichurri Sauce

  • 1/2 cup flatleaf parsley
  • 1/2 cup fresh cilantro
  • 1 shallot, roughly chopped
  • 1 jalapeno, seeded and finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup white vinegar, or fresh lime juice
  • 1 Tbsp fresh oregano, chopped
  • 2/3 cup olive oil
  • ¼ tsp black pepper
  • ¼ to 1/2 teaspoon red pepper flakes, optional
  • 1 tsp sea salt, to taste

Beef Sliders:

  • 1 pound ground beef
  • 3 Tbsp chimichurri sauce , + more for serving
  • 6 to 8 slices Pepper jack cheese
  • 1 to 2 large ripe avocado, sliced
  • Mixed greens
  • 10 slider buns, toasted

I love chimichuro sauce so much. I can't believe it never crossed my mind to load it on top of burgers....you're a genius, my friend, and these sliders are absolutely adorable!
